Ingredients:
Crust
• 250ml flour
• 250ml fine coconut
• 125ml sugar
• 125ml melted Jireh Butter
Custard
• 4 eggs
• 250ml sugar
• 60ml cake flour
• 125ml passion fruit puree (or fresh passion fruit scooped out, blended in a blend and
sieved)
• Icing sugar (garnish)
• Fresh passion fruit (garnish)
• Toasted coconut flakes (garnish)
Method:
Pre heat the oven to 180 C and prepare a 20cm x 20cm baking dish by lining it with baking
paper. Make the crust by combining the flour, fine coconut and sugar in a bowl. Pour in the
melted buDer and mix. Press the mixture into the baking dish and bake for 10 minutes.
Prepare the custard by whisking the eggs with the sugar. Add the passion fruit puree and
cake flour. Mix un3l no lumps are visible. Pour the custard over the baked crust and bake for
+- 15minutes un3l set and golden on the top. Let it cool a bit on the counter and place in the
fridge for about 1 hour. Dust with icing sugar and spoon over fresh passion fruit. Sprinkle
with some toasted coconut and enjoy.
